Sweet Potato Chili
Winter is only good for one thing and that's crockpot meals. There's nothing better than warming my place with the smells of a good ole meal slow cooking for 8-10 hours in my crockpot. I used to only cook cook my stuff during the day while I worked and then stop it when I came home from work. Now I'm fancy and upgraded to a self-timed crockpot. I'm trying to get even fancier with a wireless one I can control anywhere
Since the first day of cold wasn't until November 8th I kept my crockpot stashed away. As soon as I stepped outside to the crisp air I already knew I was headed to the store after work to get all the ingredients I needed to make some sweet potato chili. It's honestly really simple; meat, beans, tomatoes and sweet potatoes.
I love making chili because you have unlimited ways to make it. If you want to experiment with a dish this really is it. With that said, I like to keep it down to five or six ingredients. Some days it's simple and some days it's a real life science lab in my kitchen but it always very few ingredients.
1 lb. ground sausage
1 lb. ground beef
2 large cans of diced tomatoes
2-3 cans of any beans of your choice
2 large sweet potatoes
1 packet of chili powder
Ground the beef and sausage in a skillet with any seasoning you choose.
Cube two large sweet potatoes.
Add all the other ingredients to the slow cooker.
Add cooked meat to slow cooker.
Let it cook on high for 4 hours or low for 6-8 hours.
That's truly all you need to make a cold day a little bit warmer. I like to top mine with a little sour cream, avocado, and green onion. Let me know how you like to make your chili or if you tried this recipe and how you liked it. Enjoy!
